  • 2 ling fillets
  • 1 tbs peanut oil
  • 1 garlic clove
  • 2 tbs ginger, grated
  • 1 red chilli
Coriander Pesto Ingredients
  • 1 bunch coriander
  • ½ cup cashew nuts, roasted
  • 1 lime
  • ½ cup olive oil
  • ā…“ cup coconut, desiccated
  • salt

Brush both sides of the fish fillets from Costi's Fresh Seafood with the peanut oil. Heat a non-stick frying pan over medium-high heat. Cook the fish for 2-3 minutes on each side or until just cooked through.

Add grated ginger and chopped chilli and cook for a further minute.

Place the coriander, garlic, lime rind, lime juice and cashews in a food processor. Process until fine, gradually adding olive oil until combined. Add coconut and season to taste.

Serve the ling fillets with the Coriander Pesto and pair with a salad.
